Gwyneth also loves how it pairs with the bright flavors of cilantro, chili powder, cumin and lime juice.

Max Lugavere, author of New York Times bestseller Genius Foods, was a featured guest on Rachael Ray just a few weeks after Gwyneth. He also talked about his favorite new superfood – you guessed it – Jicama. What is Jicama?

Jicama is a large, tuberous root vegetable that’s native to Mexico. It’s spread across warm climates in Central and South America, South Asia and the Caribbean. It grows on long vines and is part of the legume family – think chickpeas, soybeans and kidney beans. However, we don’t often think of Jicama as a legume because we only eat the root. The bean pods, flowers, leaves and skin of the plant are poisonous.

 

Jicama has a rough golden-brown skin resembling a turnip, but once you peel off the outer layer, the inside is starchy and creamy white like a water chestnut. It has a fresh, lightly sweet flavor that makes it a versatile favorite for both cooking and eating raw. Jicama is also commonly referred to as a Mexican potato, Mexican turnip and yam bean.

 

Raw Jicama is the core superfood ingredient of Xicama.
