What Is Jicama?

Jicama (hee-kama) is a large, tuberous root vegetable that’s native to Mexico. It has spread across warm climates in Central and South America, South Asia and the Caribbean. It grows on long vines and is part of the legume family – think chickpeas, soybeans and kidney beans. However, we don’t often think of Jicama as a legume because we only eat the root.  Jicama has a rough golden-brown skin resembling a turnip, but once you peel off the outer layer, the inside is starchy and creamy white like a water chestnut. It has a fresh, lightly sweet flavor that makes it a versatile favorite for both cooking and eating raw. Jicama is also commonly referred to as a Mexican potato, Mexican turnip and yam bean.
